Luncheon Meeting in Orlando
SUSTAINABLE PRACTICES in FOOD & BEVERAGE
Our guest speaker will be Molly Crouch, Director of Environmental Services for Centerplate at the Orange County Convention Center in Orlando, the second largest convention center in the country. Centerplate is one of the largest hospitality companies in the world, with 250 North American sports, entertainment and convention venues. They are the largest food service provider for the NFL, and partner with six of the top ten most active convention centers.
With over 20 years of hospitality industry experience in theme parks, hotels, and convention centers, Crouch was brought in by Centerplate to develop and implement a variety of sustainability initiatives in partnership with the convention center, their clients and the greater Orange County community. She holds a BA in Hospitality Management from the University of Central Florida, and has participated as a panelist at the National Association of Food Equipment Manufacturers (NAFEM) Annual Convention, the University of Florida's Green Lodging and Hospitality Conference, and this year's GMIC Global Sustainable Meetings Conference.
The program for this meeting will focus on sustainable practices in food & beverage. Among the topics will be:
- Sustainable purchasing to include: food (seasonal, local, organic), non-toxic chemicals, equipment (energy star), office supplies, etc.
- Environmentally friendly serviceware
- Dealing with used cooking oil& grease removal
- Food waste "digesters" and composting
- Post-event donations of leftovers
- Overall impact of the food industry on Orange County & the convention industry
