In this session we will be discussing Sustainable Food and Beverage Initatives for you events.

  • Johnson & Wales University’s Sustainability Initiatives ·
  • Meeting the food and beverage needs of your events from 10 to 10,000 through menu creation, using local "hot lists" (farm to fork), and service styles (buffets versus plated versus boxed, etc).
  • APEX/ASTM Environmentally Sustainable Meeting Standards: Food and Beverages - Green Seal Certification

Guest Speaker:  Professor Tim Stein, a professor with The Hospitality College at Johnson & Wales University.
Tim teaches a variety of hospitality management courses from menu planning, cost control and human resource management to facilities design and strategic management. With a passion for "green” business, Stein owns and operates his own consulting company helping hospitality businesses improve their environmental performance through reduced resource consumption and third-party certification.
